Vegetarian curry

  • Hortex Flower Vegetable Bouquet 1 package
  • Coconut milk 400 ml
  • Diced tomatoes 400 ml
  • Zucchini 1
  • Onion 3
  • Chili pepper 1
  • A piece of ginger approx. 3 cm
  • Garlic 4 cloves
  • Olive oil 2 tablespoons
  • Curry 2 teaspoons
  • Mustard seeds 1 teaspoon
  • Sweet paprika 1 teaspoon
  • Cumin ½ teaspoon


Step 1

Heat olive oil in a pan and add mustard seeds and cumin seeds until they start to pop. Then add diced onions, finely chopped garlic, ginger and chili pepper. Sauté everything over low heat for a few minutes. 

Step 2

Add chili powder and curry powder, pour in some water, and stir-fry for another minute. 

Step 3

Then add diced zucchini and leave everything on the heat for another 10 minutes. 

Step 4

Finally, combine the vegetables with coconut milk mixed with chopped tomatoes, add frozen vegetables and simmer until they are tender. 

Step 5

You can serve the dish with rice or Indian bread.
