Cream of broccoli soup

Ingredients

  • Broccoli florets Hortex 1 package
  • Vegetable broth 600 ml
  • Sour cream 150 ml
  • Almond flakes 100 g
  • Onion
  • Olive oil 2-3 tablespoons
  • Nutmeg
  • Salt, pepper

Preparation

Step 1

Peel and dice the onion, then fry it in olive oil in a pan.

Step 2

Next, add the broccoli to the boiling vegetable broth along with the fried onion, cover and cook for 15 minutes.

Step 3

Then blend everything into a smooth cream.

Step 4

Pour the sour cream into a cup, add 2-3 tablespoons of hot broth and mix well to remove any lumps.

Step 5

Pour the tempered sour cream into the soup. Season to taste with grated nutmeg, salt and pepper. Serve the finished broccoli cream soup with toasted almond flakes.
