Vegetable soup with coconut milk
Ingredients
- Hortex Flower Vegetable Bouquet 1 package
- Hortex Vegetable Soup 1 package
- Chicken breast fillets 2
- Chicken broth 500 ml
- Coconut milk 1 can
- Onion 1
- Chili pepper 1
- Garlic 2 cloves
- Spicy curry 2 teaspoons
- Olive oil 2-3 tablespoons
- Cilantro or chives for sprinkling 1 bunch
- Salt and pepper
Preparation
In a large pot, heat olive oil. Add chopped onion, garlic, chili pepper, and curry. Sauté until the onion is soft.
Then add diced chicken breasts and sauté for another 2-3 minutes. Add the bouquet of flower vegetables and the vegetable soup, and continue cooking for 10 minutes.
Finally, pour in the chicken broth and coconut milk and cook for a little longer. Season with salt and pepper.
Before serving, sprinkle the soup with cilantro leaves or chopped chives.
