Fried cauliflower rice with shrimp

  • Hortex cauliflower florets 1 package
  • Shrimp - peeled, with tails on approx. 300 g
  • Eggs 2
  • Soy sauce 2 tablespoons
  • Fish sauce 2 tablespoons
  • Garlic 2 cloves
  • Chili pepper 1
  • Sesame oil 1 teaspoon
  • Coconut oil 2 tablespoons
  • Optional: chili paste 1 teaspoon
  • Cilantro or parsley
  • Shallot
  • Grated ginger 5 cm piece

This Chinese cuisine variation is full of vitamins, protein, and iron. Until fresh cauliflower is available at reasonable prices, you can successfully use frozen Hortex cauliflower. Step 1

Partly thaw the cauliflower. Blend it in a food processor until it resembles rice grains. Heat 1 tablespoon of coconut oil in a pan. Beat the eggs with 1 tablespoon of soy sauce and pour onto the pan, spreading it out like an omelette. Cook over low heat for 2-3 minutes, then slide it onto a plate, keeping it warm. Add the rest of the coconut oil to the pan and heat it up. Add the shrimp and cook for about 2 minutes until lightly golden. 

Step 2

Remove from the pan. Add grated ginger, crushed garlic, half a chopped chili pepper, and sauté for about 1-2 minutes until fragrant. Add the fish sauce, the rest of the soy sauce, sesame oil, and chili paste (if using). Sauté for about 1 minute. Add the blended cauliflower and mix well. Sauté for about 2 minutes until the cauliflower is hot. Add the shrimp and mix gently. 

Step 3

Divide onto plates. Roll up the omelette, cut into pieces, and arrange on top of the cauliflower and shrimp. Sprinkle the remaining chopped chili pepper, coriander or parsley, and chopped shallot. Serve the fried cauliflower rice with shrimp hot.
