Hortex vegetable omelette

  • Hortex spring vegetable medley 1 package
  • Eggs 4
  • Butter 1 teaspoon
  • Black pepper to taste
  • Salt to taste
  • Butter for cooking

Did you know that...?

I highly recommend this omelette for a very filling breakfast or even dinner. It only takes half an hour to prepare. I used frozen vegetables from Hortex to make the omelette. The vegetable medley contained carrots, peas, asparagus beans, Brussels sprouts, and cauliflower. I must say, it turned out delicious. You’re welcome to try it 🙂

Step 1

Thaw the vegetables and drain them well. Heat butter in a frying pan, add the vegetables, and sauté until tender while stirring frequently. Season with salt to taste. 


Step 2

Whisk the eggs together with salt and pepper, and add diced butter. Pour the egg mixture over the vegetables and cook until set. Use a spatula to lift the edges of the omelette to let the uncooked eggs flow underneath. Once the omelette is cooked on one side, slide it onto a plate and then flip it over back onto the pan to cook the other side. 

Step 3

Transfer the cooked omelette onto a plate and serve.
