Hortex vegetable omelette
Ingredients
- Hortex spring vegetable medley 1 package
- Eggs 4
- Butter 1 teaspoon
- Black pepper to taste
- Salt to taste
- Butter for cooking

I highly recommend this omelette for a very filling breakfast or even dinner. It only takes half an hour to prepare. I used frozen vegetables from Hortex to make the omelette. The vegetable medley contained carrots, peas, asparagus beans, Brussels sprouts, and cauliflower. I must say, it turned out delicious. You’re welcome to try it 🙂
Preparation
Whisk the eggs together with salt and pepper, and add diced butter. Pour the egg mixture over the vegetables and cook until set. Use a spatula to lift the edges of the omelette to let the uncooked eggs flow underneath. Once the omelette is cooked on one side, slide it onto a plate and then flip it over back onto the pan to cook the other side.
Transfer the cooked omelette onto a plate and serve.
