Carrot pancakes

Ingredients

  • Grated carrots Hortex 1 package
  • Wheat flour 1 and ½ cups
  • Sugar, preferably brown ½ cup
  • Natural yogurt 1/3 cup
  • Eggs 3
  • Baking soda 1 flat teaspoon
  • Gingerbread spice 1 flat teaspoon
  • Raisins, nuts, icing sugar or chocolate sauce for sprinkling
  • Oil for frying
  • A pinch of salt

Preparation

Step 1

Slightly thaw the carrots, then blend them. Beat the egg yolks with sugar and mix with yogurt, spices, salt, and baking soda.

Step 2

Then add the flour and the egg white foam. Mix lightly. The batter should have the consistency of thick cream.

Step 3

Add the blended carrots and mix everything. Finally, add raisins and nuts. Fry the pancakes until they are golden brown.

Step 4

When done, sprinkle with powdered sugar or drizzle with chocolate glaze.
