Carrot pancakes
Ingredients
- Grated carrots Hortex 1 package
- Wheat flour 1 and ½ cups
- Sugar, preferably brown ½ cup
- Natural yogurt 1/3 cup
- Eggs 3
- Baking soda 1 flat teaspoon
- Gingerbread spice 1 flat teaspoon
- Raisins, nuts, icing sugar or chocolate sauce for sprinkling
- Oil for frying
- A pinch of salt
Preparation
Slightly thaw the carrots, then blend them. Beat the egg yolks with sugar and mix with yogurt, spices, salt, and baking soda.
Then add the flour and the egg white foam. Mix lightly. The batter should have the consistency of thick cream.
Add the blended carrots and mix everything. Finally, add raisins and nuts. Fry the pancakes until they are golden brown.
When done, sprinkle with powdered sugar or drizzle with chocolate glaze.
